  • 3 lbs Roma tomatoes, halved
  • 1 medium Yellow onion, quartered
  • 1 head Garlic, top sliced off
  • 1 wheel (5.2oz) Boursin Garlic & Fine Herbs cheese
  • 3 tbsp Olive oil
  • 2 cups Vegetable broth
  • 1/4 cup Fresh basil

Method

  1. Preheat oven to 400°F (200°C).
  2. On a large rimmed baking sheet, arrange the halved tomatoes, quartered onion, and the head of garlic (drizzle garlic with a little oil and wrap in foil).
  3. Place the wheel of Boursin cheese in the center. Drizzle the vegetables with olive oil, salt, and pepper.
  4. Roast for 40-45 minutes until the tomatoes are blistered and caramelized.
  5. Squeeze the roasted garlic cloves out of their skins. Transfer all the roasted vegetables, garlic, and Boursin cheese to a large blender (or use a large pot and an immersion blender).
