  • 1 tbsp Olive oil
  • 1 medium Shallot, finely diced
  • 4 cloves Garlic, minced
  • 1 cup Dry orzo pasta
  • 2 1/2 cups Vegetable broth (low sodium)
  • 1/2 cup Heavy whipping cream
  • 3/4 cup Parmesan cheese, freshly grated
  • 1 tsp Fresh parsley, chopped (plus more for garnish)
  • 1/2 tsp Cracked black pepper

Method

  1. Heat the butter and olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the finely diced shallot and sauté for 3 minutes until softened and translucent.
  3. Stir in the minced garlic and dry orzo pasta. Toast the orzo in the butter and aromatics for 2 minutes, stirring constantly until it smells slightly nutty.
  4. Pour in the vegetable broth and bring the mixture to a gentle simmer.
