The texture of baked oatmeal can make or break the recipe. The secret is to only use Old-Fashioned Rolled Oats. Do not use Quick Oats or Steel Cut oats! Quick oats are cut too small and will turn into mush when baked, while steel-cut oats are too tough and will remain crunchy and undercooked. Old-fashioned rolled oats absorb the milk perfectly while retaining a satisfying, chewy texture. Also, make sure your bananas are heavily speckled with brown spots—the riper they are, the sweeter and more flavorful your oatmeal will be!

- Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish.
- In a medium bowl, whisk together the dry ingredients: rolled oats, baking powder, cinnamon, and salt.
- In a large bowl, whisk together the wet ingredients: mashed bananas, milk, maple syrup, egg, vanilla extract, and melted coconut oil.
- Pour the dry oat mixture into the wet ingredients and stir until well combined.
- Gently fold in 1 cup of the blueberries.
- Pour the oatmeal mixture into the prepared baking dish. Scatter the remaining 1/2 cup of blueberries over the top.
- Bake for 35-40 minutes, or until the center is set and the edges are golden brown.
- Let it cool for 10 minutes before slicing. Serve warm with a drizzle of extra maple syrup and a splash of milk!
