How to Slice Beef for Maximum Tenderness

If you’ve ever ended up with chewy, tough beef in your stir-fry, it comes down to how you slice it. You must slice your flank steak against the grain. Look at the direction the muscle fibers are running, and cut perpendicular to them. For even easier slicing, place your steak in the freezer for 15 minutes before cutting—it will firm up just enough to allow for paper-thin slices!

Step by step preparation

The Perfect Sauce Thickness

The cornstarch slurry is the magic ingredient here. It turns a watery soy sauce mixture into a thick, luxurious glaze. Make sure you mix the cornstarch with cold water before adding it to the hot pan, otherwise it will instantly clump up. Once it hits the bubbling sauce, it will thicken in less than 60 seconds.
