  • 2 cups Old-fashioned rolled oats (gluten-free if needed)
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 2 medium Ripe bananas, mashed (about 1 cup)
  • 2 cups Milk (almond, oat, or dairy)
  • 1/4 cup Maple syrup or honey
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 2 tbsp Coconut oil or butter, melted
  • 1 1/2 cups Fresh or frozen blueberries

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish.
  2. In a medium bowl, whisk together the dry ingredients: rolled oats, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk together the wet ingredients: mashed bananas, milk, maple syrup, egg, vanilla extract, and melted coconut oil.
  4. Pour the dry oat mixture into the wet ingredients and stir until well combined.
  5. Gently fold in 1 cup of the blueberries.
  6. Pour the oatmeal mixture into the prepared baking dish. Scatter the remaining 1/2 cup of blueberries over the top.
  7. Bake for 35-40 minutes, or until the center is set and the edges are golden brown.
  8. Let it cool for 10 minutes before slicing. Serve warm with a drizzle of extra maple syrup and a splash of milk!
