Slow Cooker French Dip Sandwiches

There is nothing quite like the comforting, savory perfection of a classic French Dip sandwich. This slow cooker version takes all the hard work out of the process. You simply drop a chuck roast into your crockpot with a rich, savory broth mixture, and let it slowly transform into melt-in-your-mouth shredded beef.

The Secret to the Best Au Jus

The dipping sauce (Au Jus) is just as important as the sandwich itself! By combining dry onion soup mix with an au jus gravy packet, we create an incredibly robust, deeply flavored broth that seasons the meat as it cooks. Don’t skip straining a little bit of this liquid gold into small bowls for dipping your toasted sandwiches!

Step by step preparation

Toasting is Mandatory

If you put wet, juicy beef on a soft roll and dip it in broth, it will instantly disintegrate. The trick is to generously butter your hoagie rolls and toast them in the oven before adding the meat and cheese. This creates a sturdy barrier that holds up beautifully to the dipping process.

Cook Time 8 hours
Course: Main Course

Ingredients

Main
  • 3 lbs Chuck roast
  • 2 cups Beef broth
  • 1 packet Dry onion soup mix
  • 1 packet Au jus gravy mix
  • 1 tbsp Worcestershire sauce
  • 6 Hoagie rolls
  • 6 slices Provolone cheese

Method

  1. Place the chuck roast in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the beef broth, dry onion soup mix, au jus gravy mix, and Worcestershire sauce. Pour the mixture over the roast.
  3. Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours) until the beef easily falls apart with a fork.
  4. Remove the beef and shred it on a cutting board using two forks. Return the shredded beef to the slow cooker to soak up the juices.
  5. Slice the hoagie rolls open, load them with shredded beef, and top with provolone cheese. Broil in the oven for 2 minutes until melted.
  6. Serve the sandwiches hot with small bowls of the leftover broth (au jus) from the slow cooker for dipping!
