- Season the chicken cutlets generously with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove the chicken to a plate and set aside.
- In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for 5-6 minutes until they are golden brown and have released their moisture.
- Add the minced garlic and fresh thyme, cooking for 1 more minute until fragrant.
- Pour in the chicken broth to deglaze the pan, scraping up all the delicious browned bits from the bottom. Let it simmer and reduce by half (about 2 minutes).
- Reduce the heat to low. Stir in the heavy cream and parmesan cheese. Let the sauce simmer gently for 2-3 minutes until it thickens slightly.
- Return the chicken (and any resting juices) to the skillet, spooning the creamy mushroom sauce over the top. Simmer for 1 more minute to heat through.
- Garnish with extra thyme and serve immediately over pasta or mashed potatoes!
