Creamy Sun-Dried Tomato Pasta

Ingredients

  • 12 oz Penne or rigatoni pasta
  • 1 jar (8oz) Sun-dried tomatoes packed in oil, drained and chopped (reserve 2 tbsp of the oil)
  • 3 cloves Garlic, minced
  • 1 cup Heavy whipping cream
  • 1/2 cup Chicken or vegetable broth
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 cups Fresh baby spinach
  • 1/2 tsp Red pepper flakes (optional)
  • 1/4 cup Fresh basil, chopped (for garnish)

Method

  1. Boil a large pot of salted water. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, add 2 tablespoons of the oil from the sun-dried tomato jar.
  3. Add the chopped sun-dried tomatoes, minced garlic, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken broth and heavy whipping cream. Bring to a gentle simmer and let it cook for 3-4 minutes until the sauce slightly thickens.
  5. Stir in the freshly grated parmesan cheese until completely melted and smooth.
  6. Add the fresh baby spinach to the skillet and stir for 1 minute until wilted.
  7. Add the cooked pasta to the sauce, tossing well to coat. If the sauce is too thick, add a splash of the reserved pasta water.
  8. Garnish with fresh basil and extra parmesan cheese before serving.
