Creamy Tuscan Salmon

  • 4 fillets Salmon (skin off)
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 4 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, drained and chopped
  • 1 cup Heavy cream
  • 3 cups Fresh baby spinach
  • 1/2 cup Parmesan cheese, grated

Method

  1. Season the salmon fillets generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the salmon for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sun-dried tomatoes, sautéing for 1 minute until fragrant.
  4. Pour in the heavy cream, bring to a gentle simmer, and stir in the parmesan cheese until smooth.
  5. Add the fresh spinach and let it wilt into the sauce (about 2 minutes).
  6. Return the salmon to the skillet, spooning the creamy sauce over the top. Serve warm!
