Creamy Tuscan White Bean Soup

  • 2 cans (15oz) Cannellini beans, rinsed and drained
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 4 cups Vegetable broth
  • 1/2 cup Coconut milk (full fat) or heavy cream
  • 3 cups Fresh baby spinach
  • 1 tbsp Olive oil
  • 1 tbsp Italian seasoning

  1. In a large Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 4-5 minutes until softened.
  2. Add the minced garlic and Italian seasoning, cooking for 1 minute until fragrant.
  3. Stir in the chopped sun-dried tomatoes, cannellini beans, and vegetable broth. Bring the soup to a gentle simmer and let it cook for 15 minutes.
  4. Using an immersion blender, briefly blend about one-third of the soup to create a thick, creamy base while leaving plenty of whole beans for texture.
  5. Stir in the coconut milk (or cream) and fresh baby spinach. Let it simmer for 2-3 more minutes until the spinach is wilted.
  6. Season with salt and freshly cracked black pepper. Serve hot with crusty bread.
