Garlic Butter Steak Bites with Zucchini Noodles

  • 1.5 lbs Sirloin or ribeye steak, cut into 1-inch cubes
  • 1 tbsp Olive oil
  • 3 tbsp Unsalted butter
  • 4 cloves Garlic, minced
  • 1 tsp Fresh parsley, chopped
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 4 medium Zucchini, spiralized into noodles (zoodles)

  1. Pat the steak cubes completely dry with paper towels. Season generously with salt and pepper.
  2. Heat the olive oil in a large cast-iron skillet over medium-high heat until it is smoking hot.
  3. Add the steak bites in a single layer (work in batches if necessary so you don't overcrowd the pan). Sear undisturbed for 2-3 minutes to develop a crust.
  4. Flip the steak bites and sear for another 1-2 minutes until browned on all sides.
  5. Reduce the heat to medium-low. Add the butter and minced garlic to the skillet. Toss the steak bites in the garlic butter for 1 minute until fragrant. Remove the steak bites to a plate, leaving the garlic butter in the pan.
  6. Add the spiralized zucchini noodles to the skillet with the remaining garlic butter. Toss gently for just 1-2 minutes until barely softened (do not overcook or they will become mushy!).
  7. Return the steak bites to the pan, garnish with fresh parsley, and serve immediately.
