Garlic Parmesan Roasted Asparagus

  • 1 bunch Fresh asparagus (about 1 lb), woody ends trimmed
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 medium Lemon, cut into wedges (for serving)

Method

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Place the trimmed asparagus spears on the prepared baking sheet in a single layer.
  3. Drizzle the olive oil evenly over the asparagus. Sprinkle the minced garlic, sea salt, and black pepper on top.
  4. Use your hands to toss the asparagus right on the pan until every spear is well coated in the oil and seasonings.
  5. Spread the asparagus back out into a single layer, ensuring they aren't overlapping.
  6. Sprinkle the freshly grated parmesan cheese generously over the top of the spears.
  7. Roast in the preheated oven for 10-12 minutes, or until the asparagus is tender-crisp when pierced with a fork and the parmesan cheese is melted and golden brown.
  8. Remove from the oven. Squeeze fresh lemon juice over the top immediately before serving.
