High-Protein Greek Chicken Meal Prep Bowls

  • 1.5 lbs Chicken breasts, cut into bite-sized pieces
  • 3 tbsp Olive oil, divided
  • 2 tbsp Fresh lemon juice
  • 3 cloves Garlic, minced
  • 1 tbsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Uncooked quinoa (yields about 3 cups cooked)
  • 2 cups Cherry tomatoes, halved
  • 1 large English cucumber, diced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup Red onion, thinly sliced
  • 1/2 cup Tzatziki sauce (store-bought or homemade)

  1. In a large bowl, whisk together 2 tablespoons of olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes (or up to 4 hours in the fridge).
  2. While the chicken marinates, cook the quinoa according to the package directions. Fluff with a fork and set aside to cool.
  3. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken (discarding excess marinade) and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through.
  4. Assemble the meal prep bowls: Divide the cooked quinoa evenly among 4 glass meal prep containers.
  5. Top each bowl with an equal amount of the cooked Greek chicken, cherry tomatoes, diced cucumber, kalamata olives, and red onion.
  6. Place a small container of tzatziki sauce inside each bowl (or dollop it on top right before eating).
  7. Seal the containers and store them in the refrigerator for up to 4 days.
