- Season both sides of the pork chops generously with salt and pepper.
- In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, and minced garlic to create the glaze.
- Heat the olive oil and butter in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes per side until golden brown and cooked through (internal temperature of 145°F).
- Remove the pork chops from the skillet and set aside on a plate.
- Pour the honey mustard mixture into the hot skillet. Let it bubble and reduce for 2-3 minutes until slightly thickened.
- Return the pork chops to the pan, turning them over to fully coat them in the sticky glaze. Serve immediately.
