Lemon Garlic Butter Shrimp

Ingredients

  • 1.5 lbs Large raw shrimp, peeled and deveined (tails on or off)
  • 1 tbsp Olive oil
  • 4 tbsp Unsalted butter, divided
  • 4 cloves Garlic, minced
  • 1/4 cup Chicken broth (or dry white wine)
  • 1 large Lemon, juiced and zested
  • 1/4 cup Fresh parsley, finely chopped
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Red pepper flakes (optional)

Method

  1. Pat the peeled shrimp completely dry with paper towels, then season evenly with the salt and black pepper.
  2. Heat the olive oil and 1 tablespoon of butter in a large cast-iron skillet over medium-high heat until shimmering.
  3. Add the shrimp in a single layer. Sear without touching them for 1-2 minutes until the bottoms are pink and golden. Flip the shrimp and cook for 1 more minute.
  4. Reduce the heat to medium. Add the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  5. Pour in the chicken broth and lemon juice to deglaze the pan, scraping up any browned bits from the bottom.
  6. Remove the skillet from the heat. Stir in the remaining 3 tablespoons of butter, lemon zest, and chopped parsley until the butter melts into a rich, glossy sauce.
  7. Toss the shrimp in the sauce and serve immediately over pasta, rice, or with crusty bread!
