- Place the chicken thighs in the bottom of a slow cooker.
- In a medium bowl, whisk together the honey, soy sauce, hoisin sauce, rice vinegar, garlic, ginger, and sesame oil.
- Pour the sauce over the chicken in the slow cooker. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the chicken is tender and cooked through.
- Carefully remove the chicken from the slow cooker and transfer it to a cutting board. Shred the chicken using two forks.
- To thicken the sauce, whisk together the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the sauce remaining in the slow cooker. Turn the slow cooker to HIGH and let it bubble and thicken for 10-15 minutes.
- Return the shredded chicken to the slow cooker and toss to coat it evenly in the thickened glaze.
- Serve warm over rice, garnished with sesame seeds and sliced green onions.
