- Season the chicken thighs lightly with salt and pepper (the soy sauce is already salty, so don't over-salt).
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 5-6 minutes per side until golden brown and cooked through.
- While the chicken is cooking, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar in a small bowl.
- Pour the honey garlic mixture over the chicken in the skillet. Reduce the heat to medium-low.
- Let the sauce simmer and bubble for 3-4 minutes, turning the chicken occasionally, until the sauce reduces into a thick, sticky glaze that coats the chicken.
- Serve the chicken over rice, garnished with sesame seeds and green onions.
